Brisket grilled cheese is a delicious and hearty sandwich that combines two classic comfort foods into one. It features smoked brisket and American cheese sandwiched between crispy buttered slices of Texas toast. - 1 5-pound brisket flat
- 2 ½ tablespoons kosher salt
- 1 tablespoon black pepper
- 2 teaspoons garlic powder
- 2 teaspoons cayenne pepper
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon chili powder

- 6 tablespoons unsalted butter softened
- 12 slices Texas toast
- 12 slices American cheese
- 24 ounces smoked brisket

Brisket

- Step 1: Pat the brisket dry with paper towels and trim excess fat with a sharp knife. You want to leave ¼-inch of the fat cap intact.
- Step 2: Remove the silver skin. It will not render during cooking.
- Step 3: Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 250 degrees Fahrenheit.
- Step 4: Combine the seasonings in a bowl to make the rub, then apply the rub all over the brisket. Gently massage it into the meat.
- Step 5: Transfer the brisket to the pellet grill fat side up, close the lid, and smoke for 3 hours or until the internal temperature reaches 160-165 degrees Fahrenheit.
- Step 6: Remove the brisket from the grill.
- Step 7: Wrap the brisket in butcher paper while keeping it fat-side up, then return the wrapped brisket to the grates to smoke for 5-6 hours or until the internal temperature reaches 200 degrees Fahrenheit.
- Step 8: Remove the brisket from the grill, rest for 30 minutes, then slice against the grain.

Sandwiches

- Step 1: Preheat your Z-Grills (preferably with branded wood pellets) or other wood pellet grill to 500 degrees Fahrenheit.
- Step 2: Transfer the skillet or griddle to the grates once hot, then leave that to preheat. The grill lid should be closed.
- Step 3: Butter one side of each slice of Texas toast and add as many pieces of bread to the skillet or griddle as it will accommodate. Place buttered side down.
- Step 4: Follow with a slice of cheese, brisket, and a second slice of cheese.
- Step 5: Top with another slice of the bread (this time buttered side up).
- Step 6: Close the grill’s lid and cook for 5-6 minutes, then flip and cook for another 5 minutes or until the cheese is melted.
- Step 7: Remove the brisket grilled cheese sandwiches from the grill, slice, and serve. Repeat with the remaining ingredients until all the sandwiches are ready.
