- 1 lb shrimp, peeled & deveined
- 8 oz andouille sausage, diced
Queso Base
- 8 oz cream cheese
- 1½ cups whole milk or half & half
- 2 cups freshly shredded white cheddar
- 1 cup pepper jack
Veg & Flavor
- ½ cup diced bell peppers
- ½ cup diced onion
- 2 cloves garlic, minced
- 1½ tsp Cajun seasoning
- ½ tsp smoked paprika
- ½ tsp cayenne

STEP-BY-STEP INSTRUCTIONS
Step 1: Smoke the shrimp and sausage
Season shrimp and sausage with Cajun seasoning and olive oil. Place them on the pellet grill and smoke until shrimp are just cooked and sausage is lightly browned.
Step 2: Prepare the cream cheese base
In a mixing bowl, combine softened cream cheese, sour cream, and garlic until smooth and cohesive.
Step 3: Combine proteins and seasoning
Add the smoked shrimp and sausage into the cream cheese mixture. Stir gently, then sprinkle in additional Cajun seasoning and shredded cheese.
Step 4: Bake the dip
Transfer the mixture to a grill-safe dish. Place back on the pellet grill and cook until hot, bubbly, and fully melted on top.Smoke at 250°F about 45–60 minutes.
