STEP-BY-STEP INSTRUCTIONS
Step 1: Prep the ham
Apply Heath Riles Honey Chipotle Rub generously over the entire exterior, working it deep between the spiral slices on all sides for full flavor coverage.
Step 2: Insert probe and set up
Insert wireless probe into thickest part of ham. Place ham on wire rack over foil tray . Preheat Z Grills to 250°F.
Step 3: Smoke low and slow
Place ham in smoker. Smoke at 250°F steady. Continue until internal temp reaches about 130°F.
Step 4: Glaze
At about 130°F internal, brush on Heath Riles Pineapple Habanero Glaze thoroughly, getting it between slices. Return to smoker and continue cooking to 135°F internal.
Step 5: Rest and serve
Remove at 135°F; rest 15-20 minutes for perfect juiciness. Slice and serve hot with holiday sides.
