Turkey Wings
- 2-4 turkey wings
Custom Spice Rub
- 1 tablespoon salt
- 2 tablespoons fresh cracked black pepper
- 2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon granulated garlic
- 1–2 dashes cayenne pepper
Optional Serving
- BBQ sauce, lemon butter, or mustard
STEP-BY-STEP INSTRUCTIONS
Step 1: Prepare rub and season wings
Mix your custom spice rub in a bowl. Massage rub generously by hand over all surfaces, using excess from board.
Step 2: Rest to room temperature
Place seasoned wings on board or tray. Let come to room temp indoors for 1.5-2 hours for even cooking.
Step 3: Smoke and flip
Preheat Z Grills to 325°F. Smoke for ~30 minutes until color develops. Flip wings, continue 15 minutes or until internal temp hits 165°F and skin has nice char.
Step 4:Rest and serve
Remove wings,Serve hot plain or with sauces like BBQ, lemon butter, or mustard.
