INGREDIENTS
Pork Belly
- 1 slab skin-on pork belly
Assembly
- 6-8 wooden skewers
- 2-3 tbsp maple syrup
- 4-6 tbsp rub
- 1-2 slices bacon
Glaze
- 1/2 cup habanero glaze
TIPS
- Use thick-cut bacon to prevent burning.
STEP-BY-STEP INSTRUCTIONS
Step 1: Prep pork belly
Trim skin off pork belly. Slice into 1-inch wide strips.Thread each strip onto soaked wooden skewers.
Step 2: Season
Brush light coat of applewood smoked maple syrup.Coat generously with rub.
Step 3: Wrap bacon
Wrap each strip in 1-2 slices thick-cut bacon. Add more rub on top.
Step 4:Smoke
Preheat Z Grills to 250°F. Place on wire rack. Smoke 2.5 hours until internal 203°F.
Step 5:Glaze
Apply cherry apple habanero glaze. Smoke few minutes to set.
Step 6:Serve
Remove. Serve hot as smoky perfection.
