Smoked Bourbon Onion Stewed Beef
The beef shoulder is first boiled and then smoked. The crispy caramelized shell, wrapped in the aroma of fruitwood smoke, is so tender that it collapses when you press it. The caramelized onions cooked with bourbon whiskey are fully integrated into the meat, with the sweet and mellow aroma of the wine mingling with the rich aroma of the meat. Drizzled with gravy and served with mashed potatoes, it warms your bones from the inside out in one bite!

INGREDIENTS
Roast Preparation
- 4 lb chuck roast
Seasoning
- 2-3 tbsp Worcestershire sauce
- 4-6 tbsp Stew's barbecue beef rub
Braising
- 2-3 tbsp Beef tallow
- 1 Onions
- 1-2 tbsp Tomato paste
- 1/4 cup Bourbon
- 2 cups Beef stock
Fresh herbs
- 2-3 Bay leaves
STEP-BY-STEP INSTRUCTIONS
Step 1: Sear roast
Apply Worcestershire sauce. Coat with beef rub.Heat tallow in skillet. Sear roast both sides.
Step 2: Caramelize
Remove roast. Caramelize onions in skillet. Add garlic and tomato paste.Add bourbon to deglaze. Add stock, herbs, bay leaves.
Step 3: Braise
Nestle roast back in. Cover.
Step 4:Smoke uncovered
Preheat Z Grills to 275°F. Smoke uncovered 45 minutes.
Step 5:Cover and continue
Cover. Smoke 2.5 hours until tender.
Step 6:Rest and gravy
Remove roast. Rest 15 minutes. Thicken liquid for gravy.
Step 7:Serve
Slice roast. Serve with gravy over mashed potatoes.
