INGREDIENTS
Meatball Mix
- 1 lb 80/20 ground beef
- 4-6 slices bacon
- 1 small onion
- 2-3 jalapeños
- 1/2 cup breadcrumbs
- 1-2 eggs
- 1 cup cheddar cheese
- barbecue rub
Stuffing & Glaze
- 4 oz cream cheese
- Favorite barbecue sauce
STEP-BY-STEP INSTRUCTIONS
Step 1: Mix ingredients
Combine ground beef, diced bacon, onion, jalapeños, breadcrumbs, eggs, cheddar, and hot rub.
Step 2: Form meatballs
Scoop mixture onto parchment. Flatten. Add cream cheese balls in middle. Roll tight.
Step 3: Dust rub
Set on wire rack. Dust with hot rub.
Step 4:Smoke
Preheat Z Grills to 275°F. Smoke meatballs for 1 hour.
Step 5:Glaze
In last 15 minutes, glaze with barbecue sauce.
Step 6:Serve
Remove. Serve as game day appetizer.
