- Coarse Black Pepper
- Heath Riles Beef Rub
- Apple Cider Vinegar & Water
- Beef Tallow
STEP-BY-STEP INSTRUCTIONS
Step 1: Prepare the ribs
Remove excess connective tissue to allow the seasonings to adhere better. Lightly coat the ribs with coarsely ground black pepper, then evenly coat with Heath Riles beef seasoning powder.
Step 2: Smoking and Spraying
Preheat the Z Grills granular grill to 275°F. Place the ribs directly on the grill rack. Once a crust forms, spray with a 1:1 mixture of apple cider vinegar and water every 30 minutes.
Step 3: Check Tenderness
When the internal temperature reaches approximately 198°F, begin testing the tenderness with a probe. Remove the ribs when they are buttery tender, typically around 203°F.
Step 4: Resting
Once the ribs have cooled to approximately 165°F, wrap them in aluminum foil and spread with butter. Place them in a warming box or oven set at 150-155°F, or in a dry refrigerator, and let them rest for 2 hours.
Step 5: Slice and enjoy
Simply slice along the bones to eat.
