- 2 tablespoons yellow mustard
- 1 tablespoon kosher salt
- 2 teaspoons black pepper
- 1 teaspoon granulated garlic (not powder)
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon brown sugar
- 1/2 teaspoon paprika

- Step 1: When ready to cook, set your pellet grill to 250 °F and preheat.
- Step 2: In a small bowl, combine the salt, pepper, garlic, thyme, rosemary, sugar, and paprika.
- Step 3: Trim off any large pieces of fat or silver skin.
- Step 4: Spread a thin layer of mustard over the lamb and rub the lamb herb rub evenly all over the meat.
- Step 5: Place the lamb in the smoker. Smoke for 4 hours or until the internal temperature of the meat reaches 150 °F.
