This bone-in leg of lamb features a flavorful herb rub and is smoked low and slow. It’s flavor packed to perfection.

  • 5-7 pound  leg of lamb, bone in
  • 2 tablespoons yellow mustard
  • 1 tablespoon kosher salt
  • 2 teaspoons black pepper
  • 1 teaspoon granulated garlic (not powder)
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon brown sugar
  • 1/2 teaspoon paprika

Instructions

                                                                                          • Step 1: When ready to cook, set your pellet grill to 250 °F and preheat.
                                                                                            • Step 2: In a small bowl, combine the salt, pepper, garlic, thyme, rosemary, sugar, and paprika.
                                                                                            • Step 3: Trim off any large pieces of fat or silver skin.
                                                                                            • Step 4: Spread a thin layer of mustard over the lamb and rub the lamb herb rub evenly all over the meat.
                                                                                            • Step 5: Place the lamb in the smoker. Smoke for 4 hours or until the internal temperature of the meat reaches 150 °F.
