Smoked Chicken Tacos

Smoked chicken tacos are loaded with flavor. Chicken is smoked until tender and juicy before it’s chopped and stuffed into charred tortillas with tomatoes, onion, sliced avocado, and chopped fresh cilantro. We’re using boneless thighs since they’re easy to prepare, smoke quickly, and won’t dry out.

  • 2 pounds chicken thighs, boneless and skinless
  • 2 tablespoons vegetable oil
  • 2 teaspoons chili powder
  • 1 ½ teaspoons fine sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cumin
  • Juice and zest of 2 limes
  • 12 small flour tortillas
  • 2 Roma tomatoes, seeds removed and chopped
  • 1 Persian cucumber, halved and sliced into half moons
  • 1 jalapeno, thinly sliced
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped red onion
  • 1 ripe avocado
  • Lime wedges, for serving

Instructions

                                                                        • Step 1: Pat the chicken thighs dry with paper towels and rub them with oil.
                                                                        • Step 2: In a small bowl, combine the chili powder, salt, garlic powder, onion powder, black pepper, and cumin.
                                                                        • Step 3: Season each chicken thigh on both sides with the seasoning mixture, then transfer the thighs to a non-reactive bowl. Toss with the lime juice and zest.
                                                                        • Step 4: Refrigerate and leave to marinade for 2 hours.
                                                                        • Step 5: Preheat your Z Grills Pellet Grill (preferably with branded wood pellets) or other wood pellet grill to 225 degrees Fahrenheit.
                                                                        • Step 6: Transfer the chicken to the grill grates, close the lid, and smoke for 1 hour to 1 hour and 15 minutes. The chicken is done when the internal temperature registers 165 degrees Fahrenheit.
                                                                        • Step 7: Carefully remove the chicken from the grill and rest for 10 minutes.
                                                                        • Step 8: Meanwhile, heat a grill pan or skillet over high heat.
                                                                        • Step 9: Add the tortillas and warm for 30-45 seconds per side or until charred in some spots.
                                                                        • Step 10: Chop the chicken thighs and divide the chicken between the tortillas. Follow with tomatoes, cucumber, jalapeno slices, cilantro, and red onion.
                                                                        • Step 11: Halve, pit, and peel the avocado, then thinly slice it. Divide the slices between the tacos.
                                                                        • Step 12: Plate with lime wedges on the side and serve.
