INGREDIENTS
- 1 whole rainbow trout
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Beef tallow
- 1 lemon
- Fresh herbs
- Cilantro
- Melted butter
STEP-BY-STEP INSTRUCTIONS
Step 1: Prep the trout
Pat the trout dry and brush lightly with olive oil. Season evenly with salt and pepper.
Step 2: Add aromatics
Place lemon slices and fresh herbs inside the fish cavity.
Step 3: Preheat the grill
Preheat your Z Grills Pellet Grill to 225°F using mild wood pellets.
Step 4: Smoke the trout
Place the trout on a wire rack, skin-side down. Smoke for 45-60mins, until the flesh flakes easily.
Step 5: Finish and serve
Optional: brush lightly with melted butter. Rest for 5 minutes, then serve warm.
