Ingredients
Serving Sizes
- 1 lb 80/20 ground chuck (makes 2 half-pound patties)
- 1 small onion, thick sliced (raw or lightly grilled)
- 1 fresh tomato, sliced
- 2-3 fresh pimentos, sliced
- 2 slices of American cheese per burger (or your favorite cheese)
- Your favorite BBQ sauce
- Optional add-ins (my picks for extra flavor):
- Grilled bell peppers
- Roasted mushrooms
Topping
- Pickled jalapeños for heat
- Fresh lettuce or arugula for crunch
- Salt and pepper (or your favorite BBQ rub)
Instructions

Step 1: Form the Patties
- Step 2: Divide the ground chuck into two equal portions (½ lb each).
- Step 3: Shape into thick patties, pressing a small dimple in the center to prevent bulging.
- Step 4: Season generously with salt and pepper (or BBQ rub).

Step 5: Let rest on the cutting board for 30 minutes so the seasoning can work into the meat.
- Step 6: Set the temperature to 160°F (Smoke setting or lowest setting).

First Smoke

- Step 1: Place the patties on the grill and smoke them low and slow for 1 hour.

Sear the Burgers

- Step 1: After an hour, remove the patties and set aside.
- Step 2: Increase the grill temperature to 450°F.
- Step 3: Place the burgers directly over the fire pot (bottom grates).
- Step 4: Cook with the lid closed for 2-3 minutes per side, flipping once, until you reach your preferred doneness (about 4 minutes total for medium-rare).

MELT THE CHEESE

Step 1: Add 2 slices of cheese to each burger.
- Step 2: Close the lid and let it melt fully (about 1 minute).

- Step 1: Place patties on buns.
- Step 2: Layer with sliced onion, tomato, pimentos, and any extra veggies you love (grilled peppers, mushrooms, lettuce, jalapeños).
