INGREDIENTS

  • Beef Back Ribs
    2 racks beef back ribs
  • Seasoning
    Your favorite steak or beef rub
  • Pellets
    Z Grills Cherry Wood pellets (recommended)
    Z Grills Oak Wood pellets (optional)
  • For Spritzing
    Water

INSTRUCTIONS

Prepare the Ribs

  1. Remove the beef back ribs from the cryovac packaging.
  2. Pat the ribs dry with paper towels.
  3. Trim away any loose pieces of meat or fat that don't look clean.
  4. Leave the membrane on the back if you prefer, but score it with a knife to help the seasoning penetrate.
  5. Slice the rack into individual ribs to create "party ribs."
Season
Generously coat every side of each rib with your favorite steak or beef rub, making sure to season the backs as well.
Let the ribs rest on the cutting board while you prepare the grill.
Fire Up the Z Grills
Fill your hopper with Cherry pellets for a slightly sweet smoke. Oak is another excellent choice, or simply use your favorite Z Grills pellets.
Preheat your Z Grills pellet grill to 250–275°F.

Arrange the Ribs
Place the individual ribs on a wire rack, leaving a little space between each one. Using a wire rack makes it easy to move all of the ribs on and off the grill at once.
Place the rack on the middle cooking grate.

Cook
Cook for 2 hours at 250–275°F.
After two hours:
  • Check the ribs for any hot spots or excessive browning.
  • Lightly spritz the ribs with water to cool the surface and help preserve the bark.
  • Internal temperature should generally be around 170–185°F.
Return the ribs to the grill and continue cooking for 1 more hour.
Finish
At about the 3-hour mark, the ribs should be 200°F or higher and probe tender.
If you like sauced ribs, this is the time to brush on your favorite barbecue sauce.
Personally, I leave them unsauced and treat them just like Dino ribs, letting the beef and seasoning shine.
Remove the ribs from the grill and allow them to rest for several minutes before serving.
