How to Sear on a Pellet Grill — Direct Flame & High Heat (By Model)

Method 1: Direct Flame (600 Series)

Preheat the grill to 450°F.

Open the lid and start grilling.

Pull out the side lever to expose the firepot.

Allow the flame to fully ignite and become visible.

⚠️ For 600 series only:

Do not close the lid while searing.

Method 2: Direct Flame (Except 600 Series)

  1. Preheat the grill to 450–500°F.
  2. Let the grill stabilize at maximum temperature for at least 10 minutes.
  3. Place steaks or chops directly on the grill grate.
  4. Sear with the lid closed — 60–90 seconds per side for a good crust.
  5. Continue cooking with the lid closed until your desired internal temperature is reached.
⚠️ Important Safety Note for all models: Never open the direct flame section when fatty food is directly above it — this can cause a grease fire.

Method 3: Cast Iron / GrillGrates (All Other Models)

Preheat grill to 450°F and let it fully stabilize (15–20 min).

Place a cast iron skillet or GrillGrates directly on the grill grates — let them preheat for 5 more minutes.

Pat your steak completely dry and season. A dry surface = better crust.

Sear on the cast iron for 2–3 minutes per side with the lid closed.

Finish to target internal temp.

💡 Reverse sear method (recommended for thick steaks): Smoke your steak at 225°F until it hits 115°F internal, then sear on high heat for a perfect edge-to-edge cook with a great crust.

For 700 Series Models:

Remove the drip tray and the protective cover (heat baffle).

You may remove the grill grate or leave it in place — both are fine.

Set the cast iron grate directly above the fire pot.

This allows for direct heat and better searing.
