STEP-BY-STEP INSTRUCTIONS
Step 1: Make the filling
In a bowl, combine softened cream cheese with shredded mozzarella, pepper jack, and Monterey Jack. Add generous Cajun honey rub and some hot honey. Fold in crawfish tails until evenly mixed.
Step 2: Stuff and wrap
Halve and core jalapeños. Stuff each half with cheese-crawfish mixture, press halves back together. Wrap each stuffed jalapeño tightly with a slice of bacon. Dust wrapped poppers lightly with more Cajun honey rub.
Step 3: Smoke the poppers
Preheat to 350°F.Place wrapped poppers on the grates. Smoke for about 30 minutes until bacon is crisp and golden, cheese is melted and bubbly.
Step 4:Finish and serve
Remove from smoker. Drizzle generously with hot honey for sweet-heat glaze. Serve hot as the perfect cheesy, smoky, spicy bite—great for parties!
