Foil Boat Smoked Brisket
A whole brisket is peppered and rubbed, smoked, set in a foil boat with tallow, then rested before slicing.
Trim and prep
Pat the brisket dry. Remove excess fat, deckle fat, silver skin and round edges. Save fat trimmings for tallow.

Season the brisket
Apply coarse black pepper followed by My Stew’s BBQ Beef Rub. Insert a thermometer probe.

Smoke the brisket
Smoke at 225°F on the pellet grill. Use a smoke tube for extra smoke during the first few hours if desired.

Make the foil boat
At about 170°F internal, place the brisket in a foil boat, pour tallow over the top and raise the smoker to 250°F.

Finish until tender
Cook until 198–200°F internal and probe tender.

Rest, slice and serve
Let the internal temperature drop to 170°F. Wrap in butcher paper with tallow and rest at least 1 hour before slicing against the grain.
