INGREDIENTS
Meatball
- 1.31 lbs ground beef
- 1 lb Jimmy Dean breakfast sausage
- 2 tbsp Tailgaters BBQ Party Rub
- 2 tbsp Honey Chipotle Rub
Chili Base
- 1 red bell pepper
- 1 green bell pepper
- 1 medium yellow onion
- 3 cloves garlic
- 1 packet SuckleBusters Chili Kit
- 1 can beef broth
- 1 can light kidney beans
- 1 can dark kidney beans
- 1 can petite diced tomatoes
- 1 can tomato soup
Optional Garnish
- Jalapeños
- Cheese, green onions, sour cream
STEP-BY-STEP INSTRUCTIONS
Step 1: Mix meatball
Combine ground beef and sausage. Season inside with Party Rub and light Honey Chipotle Rub.
Step 2: Form meatball
Shape mixture into large ball.Place rack in pot. Set meatball on rack. Season outside with Honey Chipotle Rub.
Step 3: Add chili base
Add broth, tomatoes, beans, soup with water, bell peppers, onion, garlic to pot. Add Chili Kit packet. Mix.
Step 4:Smoke
Preheat Z Grills to 275°F. Smoke until meatball reaches 145-150°F internal (2-2.5 hours).
Step 5:Shred meatball
Remove meatball. Shred into chunks with bark pieces. Add to pot. Mix.
Step 6:Simmer
Return pot to smoker. Smoke 1-2 hours more. Add water if thick.
Step 7:Serve
Taste and adjust. Serve hot with garnishes like cheese, onions, sour cream, cornbread.
