STEP-BY-STEP INSTRUCTIONS
Step 1: Prep the ribs
Flip ribs bone-side up. Peel off membrane. Lightly trim excess fat. Coat all sides with yellow mustard as binder. Season generously with favorite beef rub.
Step 2: Smoke low and slow
Preheat Z Grills to 225°F. Place ribs bone-side down directly on grates. Smoke for about 4 hours until bark is deep and set.
Step 3: Make and apply glaze
While smoking, mix Blazing Star spicy BBQ sauce with Melinda's hot sauce orange marmalade for spicy orange glaze. Brush evenly over ribs. Return to smoker for 30 minutes to set glaze.
Step 4: Wrap, rest, and serve
Wrap ribs tightly in foil with pats of butter and beef tallow. Rest wrapped for 45 minutes. Unwrap, slice between bones, and serve hot—tender, smoky, and glazed to perfection.
