INGREDIENTS

Ham Preparation  

  • 1 boneless ham  

Seasoning

  • Honey rub
  • Cosmo Q pineapple heat

Braising & Finish

  • Pineapple juice (with chunks)

STEP-BY-STEP INSTRUCTIONS

Step 1: Prep the ham

Score ham with clean crosshatch marks. Apply honey rub generously.

Step 2: Start smoking

Insert RFX thermometer probe into ham.Preheat Z Grills to 250°F. Smoke ham for about 9 hours until internal reaches 165°F.  

Step 3: Add pineapple and rub

Place ham in big foil pan. Pour pineapple juice and chunks over it. Dust with more honey rub and Cosmo Q pineapple heat.

Step 4:Cover and reheat

Cover with foil. Reinsert probe. Increase grill to 325°F. Cook until internal reaches 202°F.

Step 5:Rest and serve  

Remove ham. Rest about 3 hours. Pull or slice. Eating it together with the main bread dish.
