- Chicken wings
- Pickle juice
- Duck fat
- Heath Riles chicken rub
- Oil
- Heath Riles garlic parmesan seasoning
STEP-BY-STEP INSTRUCTIONS
Step 1: Brine wings
Submerge wings in pickle juice. Fridge 2 hours.
Step 2: Rinse and dry
Rinse wings. Pat dry. Fridge uncovered 1 hour.
Step 3: Season
Coat wings with duck fat.Rub Heath Riles chicken rub generously.
Step 4:Smoke
Set Z Grills to 250°F.Smoke wings 1.5 hours. Flip halfway. Reach 165-170°F internal.
Step 5:Fry
Heat cast iron pan with oil high.Fry wings 2 minutes per side until golden.
Step 6:Toss seasoning
Toss in Heath Riles garlic parmesan.
Step 7:Serve
Serve hot.
