Remove the membrane. Lightly coat ribs with yellow mustard, then generously apply BBQ seasoning or sauce, pressing it into the meat.
Step 2: Preheat the grill
Preheat your Z grill pellet oven to 225°F.
Step 3: Smoke
Place ribs directly on the grates or a wire rack. Smoke for about 3 hours until a rich bark forms.
Step 4: Tenderize
Wrap ribs with butter and continue cooking for about 1 hour, until tender and flexible.
Step 5: Glaze
Brush with BBQ sauce during the last 20–30 minutes for a sticky finish.
Step 6: Rest and serve
Rest for 10–15 minutes, then slice between bones and serve hot.
