DINNER PLANNING & COOKING

FAQs About Thanksgiving Dinner

What size turkey do I need for a Thanksgiving dinner for 10 people?

For 10 people, plan on an uncooked whole turkey weighing about 10–15 lb. Around 10 lb is a starting point when serving plenty of sides; choose closer to 15 lb for hearty appetites or more leftovers. These are whole-bird weights, including bone. Before buying, check that the turkey and any roasting pan fit your grill, with room for airflow.

How long does it take to thaw a Thanksgiving turkey?

Allow about 24 hours for every 4–5 lb in a refrigerator at 40°F or below. Keep the wrapped bird in a tray to catch drips. Once thawed this way, cook within 1–2 days and fit any brining into that period. Never thaw on the counter. Cold-water thawing requires changing the water every 30 minutes and cooking immediately after thawing.

Do I need to brine a turkey before smoking it?

Brining is optional. Choose a recipe suited to your turkey and check the label: a pre-brined, self-basting, or enhanced bird may already contain salt. Do not automatically add another full brine. If you choose to brine, keep the turkey refrigerated at 40°F or below and stay within the safe raw-turkey storage window. See our dry-brined turkey recipe for the preparation method.

How long does it take to smoke a turkey on a pellet grill?

There is no single reliable time for every turkey. Weight, whole versus spatchcocked preparation, grill temperature, and outdoor conditions affect the cook. Use the selected recipe for a planning estimate and allow a buffer. Confirm doneness with a food thermometer rather than the clock. Compare our whole turkey recipe and spatchcock turkey recipe.

What internal temperature should Thanksgiving turkey reach?

Use a food thermometer to verify at least 165°F in the thickest part of the breast and the innermost thigh and wing, without touching bone. Do not rely only on meat color, a pop-up timer, or a predicted cooking time. Check more than one location even when using a grill’s meat probe.

Which Thanksgiving side dishes can I make ahead?

Choose sides with explicit make-ahead, storage, and reheating instructions. Preparing ingredients ahead is different from partially cooking a dish. Our Smoked Mac and Cheese, Grilled Vegetables, and Smoked Cornbread offer menu ideas, but should not all be assumed to be make-ahead recipes. Promptly refrigerate cooked food and reheat leftovers to 165°F.

Can I cook turkey and side dishes on the same pellet grill?

Possibly, if the usable cooking space, cookware, temperatures, and timings are compatible. Keep raw poultry and its drips separate from ready-to-eat food. Use separate cooking stages or another appliance when recipes need different temperatures. Compare Z Grills pellet grills by usable rack space and dimensions.

What size turkey can I cook on a Z Grills pellet grill?

The Z Grills 11002B, 10502B, and 1000D4E can accommodate a 20 lb turkey. The 700D4E and 7002C2E can accommodate a 15 lb turkey.

How should I store and reheat leftover Thanksgiving turkey?

Divide turkey into smaller portions and place it in covered shallow containers. Refrigerate at 40°F or below within 2 hours, or within 1 hour if exposed to temperatures above 90°F. Do not wait for it to cool to room temperature first. Use refrigerated leftovers within 3–4 days or freeze them. Reheat leftovers to at least 165°F.
